It is often used in Spanish cuisine to flavor stews, many rice based dishes (such as paella), chorizo, and romesco sauce (from Catalunya). Of special note, it is used in the very well known "Bacalao a la Vizcaína," (codfish stew) in the Basque region. Makes a cute thank you gift or unique present for the foodie friend. Add to your favorite marinade or BBQ rub for grilling. This spice is a fantastic option when making crab cakes, ceviche, and smoky mashed potatoes. Adds great flavor to soups and stews. An interesting and fun use of the Nora Chilies is making flavored vinegar and infused oil. These can be used for dressings, sauces, and marinades. See tips below.

-Mix Nora Chilies with crushed garlic and a little olive oil to make a rub for meat. Easy!
-Make flavored vinegar by adding 1 tbsp of Nora Chilies to about 2 cups of white wine vinegar in a jar. Let sit (covered) and infuse for 2-3 weeks on kitchen window sill (for example) as the flavor will develop more quickly with sunlight.
