Hot Smoked Paprika (Pimentón)

Spanish Hot Smoked Paprika, or "pimentón" is a mildly hot pepper known in Spain as "Pimentón de la Vera." It is appreciated in many, many dishes from "pollo a la vasca" (chicken Basque style), "gypsy potage" (cod stew), "patatas bravas" (spicy potato tapa), Catalan romesco sauce, and the list goes on... A very versatile & deliciously smoky woodsy flavored paprika, it is commonly used not only in Spain but in the Middle East as well.

Everyday cooking: You can really use this in anything such as in crockpot stews, chilis, legumes (i.e. lentils, garbanzos, beans etc), tomato based pastas, all proteins and even as a BBQ rub. There are so many uses for this particular pimenton, or paprika, including but not limited to roasted chicken to soups to potato dishes to flavored spice butter...

Quick tips:
-Sprinkle Hot Smoked Paprika on chicken or fish before broiling.
-Add to fried potatoes with a drizzle of aioli to make delicious patatas bravas.
-To make homemade hummus: 1 can of chickpeas, 1/2 tsp lemon, salt to taste, 3/4 tsp of paprika, (1 garlic clove mashed optional). Mash/mix everything together until desired consistency (chunky or smooth) and refrigerate.
