Mini Faux Paella - Serves 1-2 people
1 cup Long grain rice or similar
Spanish Chorizo sliced ( about 4 oz)
1 tablespoon Piquant Rice Blend
1 tsp tomato paste
2 cups water
Pan fry sliced chorizo in a couple of drops of olive oil (optional) for 4-5 minutes or until heated through/crisp. Bring 2 cups of water to a boil. Stir in 1 cup of rice, pan fried chorizo, Piquant Rice Blend, tomato paste, and salt (optional to taste). Reduce heat to low, cover and simmer for 20 minutes. Remove from heat. Let it stand covered for 2-3 minutes or until water is absorbed. Fluff with a fork and serve as a side or eat as is.
Recipe can also be made in a rice cooker.
