Fire Roasted Red Pepper Pasta
8 oz spaghetti
4 oz fire roasted red peppers
1/2 tsp Hot Smoked Paprika (Pimentón)
4 oz tomato sauce
1 tbsp heavy cream (optional)
1 minced garlic clove
Parmigiano Reggiano for garnish. Garlic bread on the side is encouraged!
Boil pasta until tender and set aside. Heat skillet with 2 tbsp olive oil, add minced garlic and peppers and sautee 3-4 min. Add tomato sauce and Pimentón, mix gently. Remove from pan and blend in food processor. Add a pinch of salt, blend and taste. If sauce is too thick, dilute with a bit of water until desired consistency is reached. Add sauce to pasta and grated parmigiano on top.
